About Portobello

Portobello pub co is a young, upcoming business, having grown from 2 businesses to 27 pubs and bars in the last 4 years, we are looking to continue our growth and need a hungry, energetic, hands-on area chef to help us.

Portobello have pubs in London, Brighton & Worthing serving traditional pub classics, with seasonal twists. Our food is fresh, and menus change regularly. We do not believe in foams, gels & smears, but wish to deliver flavourful, consistent, great value plates of food!

Responsibilities:

Work efficiently alongside Group Executive chef, and area manager supporting all sites

Drive food sales throughout an area of pubs

Deliver food GP budget across an area of pubs

Support head chefs with recruitment, induction & training

Ensure compliance with Food Safety & Health & Safety regulations to the standards of the company, achieving high levels of ratings within the business

Develop the next generation of head chefs

Quality checks on all foods within each kitchen to comply to consistency across all sites

To ensure food presentations, service and systems are adhere to standards by the company

Oversee kitchen operations, ensuring highest standards, quality and cleanliness

Manage stock inventory, food purchasing and cost control measures to optimize efficiency and minimize waste

Handle feedback with professionalism and empathy, striving to resolve issues promptly and effectively

Requirements:

Proven track record of sales growth and delivering KPIs

Must have good organizational skills & excellent communication with all senior team

Strong leadership skills, with the ability to inspire and motivate a team

Knowledge of food safety regulations and industry standards

Ability to thrive in a fast-paced environment and adapt to changing priorities

Must have a positive can do attitude
