Assistant Bar Manager - Gaia - Mayfair, London



Reports To: Bar Manager



J O B P R O F I L E D E S C R I P T I O N :



To support the Bar Manager in overlooking all wet outlets of GAIA, the Restaurant Dispense, Lounge Bar, NYX Bar and NYX Bottle Dispense. The Assisant Bar Manager’s responsibility is to endure the following of a cost-effective and quality-focused beverage operation. Ensure and maintain high standards of service, hygiene, health and safety standards, discipline and compliance within legislative requirements. Work closely with GAIA Management team to drive sales and productivity within the venue while managing GAIA standards and bar routines.



With the direction of the Bar Manager and support of the intire Bar Team the Assistnat Bar Manager will provide a new cocktail list twice a year in accordance with GAIA ethos and guidelines and will constantly thrive to improve offering in line with latest trends.



DAILY R E S P O N S I B I L I T I E S :




  • Greet and motivate of the entire Team

  • Take responsibility for maintaining high quality standard required

  • Contribute to the achievement of margins at targeted levels

  • Familiarize with previous day report

  • Cleaning and maintenance walk-arounds

  • Check daily delivery notes and advise management of any shortage at the daily management briefing

  • Assist with deliveries if needed

  • Check team attendance and allocation

  • Check fresh products quality (juices, fruits, puree etc.)

  • Try all homemade ingredients and assure they are correctly prepared

  • Approve morning check list

  • Attend staff briefing

  • Assure that all Bar related menus are up-to-date

  • Assure all drinks are prepared and served according to GAIA standards

  • Oversee the bar display set up to maximize functionality and attractiveness

  • Maintain low wastage level through effective stock management and rotation, accurate recording, training and active monitoring

  • Monitor, review and feedback on individuals’ performance

  • Overlook the payment processing behind the bar

  • Endure communication between all areas of the venue is working at an optimum level

  • To support Bar Team at peak times and to undertake any operations duty which might be reasonably required

  • To work closely with other members of the Management Team and assist if necessary

  • Innitiate seasonal menu change in collaboration with the rest of the Team



WEEKLY R E S P O N S I B I L I T I E S :




  • Add points and attend management meeting

  • Check consumable stock and emergency stock

  • Send weekly training material for FOH

  • Send breakage report to GM/AGM

  • Send sales breakdown report to GM/AGM and Brand Beverage Manager

  • Approve weekly Bar Team training topics



BI- WEEKLY R E S P O N S I B I L I T I E S :




  • Conduct stock-take on every 15th of the month and month end

  • Provide reasonable explanation for an inventory discrepancy if any

  • Attend bi-weekly meeting with Bar Manager and Head Bartender



MONTHLY R E S P O N S I B I L I T I E S :




  • Add points and attend monthly meeting with the Bar Team and GM

  • Conduct OS&E inventory for the Bar and report the count to the Bar Manager

  • Conduct monthly training for the FOH Team
