Job Description

As Head Sommelier at Zuma, you’ll be the expert behind every bottle, leading the department, curating unforgettable pairings, and creating bespoke, luxurious experiences that will leave guests talking long after they’ve left. Own the wine and sake experience at Zuma! Please note this position is offered on a seasonal contract (CDD).


Zuma is a contemporary Japanese restaurant collection, inspired by the dynamic Izakaya dining style. This role will be based in Zuma Saint-Tropez, set to open in the summer of 2025. Our luxurious venue will embody the dynamic energy and sophistication that this iconic destination is known for. Featuring elegant outdoor dining, Zuma Saint-Tropez will be the ultimate dinning destination in the region.

Main Duties

Your key responsibilities will include:


  • Build strong, lasting relationships with regular and high-value guests, delivering personalized wine experiences.
  • Collaborate with the Global Head of Wine to enhance and curate the wine and sake list and offerings.
  • Drive revenue by maximizing up-selling opportunities during service, and offering tailored recommendations.
  • Oversee budgets, monitor operating costs, and implement strategies to control expenditures.
  • Manage team schedules, assess performance, and lead ongoing training to develop sommelier skills.
  • Ensure strict compliance with health, safety, and hygiene standards, maintaining wine equipment and POS system accuracy.
