Job Specification: Army and Navy Club Job Title: Junior Sous Chef Ribbon Bar Reporting to: Executive Head Chef and Senior Sous Chef The Army and Navy Club also known as the Rag is one of London's most prestigious private clubs, welcoming members from around the globe, all walks of life and from both military and non- military backgrounds. The club is a hidden gem, situated at 36 Pall Mall in the heart of Mayfair with views over St James's Square and offers members a luxury home from home thats familiar, comfortable and welcoming. The successful candidate must have a passion for producing top quality dishes and have 1 years of experience as a Junior Sous Chef or Senior CDP role. If successful, you will be expected to be an integral part of the Kitchen Team. The Junior Sous Chef will have the full support of the Executive Head Chef and Senior Sous Chef, to achieve a very successful and consistent Fine Dining Restaurant, Banqueting and Brasserie operation, as well as take the initiative and support the breakfast/staff chef on a day to day basis. This is an exciting opportunity for a well organised and talented individual looking to progress their experience and ideas for menus and kitchen planning, as well as provide insight into current trends, all within a supportive environment. Key responsibilities Assist the Executive Head Chef and Senior Sous Chef in the development of seasonal menus and ensure smooth running and high level of service of the Ribbon Bar Brasserie operation Have a strong team ethic by working in cohesion with banqueting chefs as well as to supervise performance with understanding of communication and teaching skills with junior members of the brigade Work professionally, lead by example and display a high standard of consistency of cooking, as well as knowledge in all sections of the Kitchen Be responsible for the quality control of produce, costs, ordering, deliveries, stock control of all prepared produce, as well as assist in accurate monthly stock takes Handle all feedback in a professional and positive manner Have excellent knowledge of food safety and health and hygiene practices Excellent Knowledge of Allergens and support Senior Sous Chefs in all aspects of our food safety manual We Offer Staff benefits: 28 days holidays including Bank holiday Progression within the role Additional holidays during the Christmas break Interest-free season ticket loan Long service award scheme Retirement Gift Scheme Uniform and laundry service Free meals on duty Free eye test and glasses vouchers Additional services: Generous Pension scheme EAP & Employee wellbeing services Start date for position: April 2025 AMRT1_UKCT
